We have been so excited for the day when we can eat our own homemade sausage using REAL casings! But there's a lot of work and a lot of time that goes into that first juicy bite...
Linnae and Julia remove the intestines.
Sarah and Simon empty them out.
Rinsing and washing them over and over, then soaking them in salt water overnight.
Everyone helped to scrape them squeaky clean, inside and out!
A couple weeks later we had time to make the sausages!
Mixing the meat, fat, water, salt, pepper and garlic powder together.
Then filling the casings!
We got one happy feller here holding a sausage made using the bung casing :)

All ready for the freezer!
Then came supper time... all from the farm, Hallelujah!! Fresh garden spuds, garden carrots, tomatoes, sauerkraut, homemade ketchup and sizzling beef sausage!
Yum, yum, YUM! So worth the effort!
